Bo's Fresh Basil & Homegrown Tomato Omelete...

I think I've found the perfect omelete recipe. I made it up myself. And if anybody would like this recipe, here it is:

First, gather your ingredients. I use salsa as a garnish, so I get that out first thing. (I like the kind of salsa with cilantro in it.)

Next, I chop up some onions. I also chop up a handful of some of my homegrown cherry tomatoes, which I'm growing on my deck.

Grab some of your favorite cheese. I use half a slice of cheddar. And also grab your silicone rubber utensils. (I think they're silicone---it's that type of rubber which won't melt if you use it in hot pans.) My silicone rubber spatulas were given to me by my sister at Christmas, since she also gave me non-stick Calphalon omelete pan. (The secret of this omelete is having a really good non-stick pan.)

We'll need just a bit of half & half.

And we need spices. First off, I use Dill. I have to use store bought dill since I didn't grow any in my kitchen herb garden.

And you'll need some good ole salt & pepper. (My sister gave me that pepper mill at Christmas, too, can you believe it? She also gave me a wonderful crock pot and Rubbermaid blender.)

And then I go to the deck garden and pick some basil. I finely chop about a tsp and a half. (Basil is a strong herb so you have to err on the side of "not enough".)

Then crack 2 eggs and one extra egg sans the yolk into a container and whip. Put in about a tbsp of the half-and-half. You can put your dill in there, too. And you can put the salt & pepper in there, too.

After melting one tbsp of butter in the Calphalon non-stick skillet, pour your egg mixture in. I put the temp of the burner on "6". And I'll cook the mixture for 4 minutes.

While those 4 minutes are ticking away, keep a lid on the pan.

At the end of the four minutes, when the bottom of the omelette looks as if it's getting more solid, lower the burner temp to "4", and then gently lay the tomatoes, onions, cheese and basil in there---on an area of one half of the omelete.

Let it cook a little more (maybe 2 more minutes). Use a rubber spatula to gently loosen the edges of the omelete all the way around---and that way you can gently loosen any parts in the center which seem "stuck".

When you know the omelette is not stuck anywhere, and the vegetables are cooked, and the omelete, too, looks almost completely cooked----gently use one (or two ) rubber spatulas to "flip" the omelete. (This is the fun part.)

Let it cook a minute more, and then gently slide your omelette to your plate. You can use the rubber spatula to help this process.

Garnish with the salsa and a sprig of basil....and VIOLA! Bo's fresh basil and homegrown tomato omelette!

Bo, I think that is what we are going to have for supper.
My hens are laying so well, there are tons of eggs, I probably have five dozen in the fridge. I wish you were closer and the hens would keep you supplied with fresh free range eggs. even myu poor little blind hen Helen lays eggs, she just poops them out wherever she is though since she can never find the hen house. Poor Helen.

Helen is pretty pathetic. she breaks my heart, she is constantly falling in the window wells since she can't find her way. You should see her trying to come to me when I call her. It is so sad and so sweet. She knows me and gets excited when I come for her, she knows I'll put her in the feed bowl. Poor little thing. somebody brought her to me, that is how all of the animals arrive here, somebody brings them, I have an astonishing collection of rag tag critters, many of them handicapped in some way or the other. Helen is pretty unique though.

Maren, thank God there are people like you who take care of lost or injured animals & birds. If I lived in a place where there was room for them (and Blaine let me) I'd have a lot more animals than the 2 cats we have. I rescued Little Baby when she was just a couple weeks old from a bush in the middle of gang territory here in Kansas City. Blaine rescued Leonard from a shelter---Leonard was a kitten, lost & injured in a tornado when the shelter found him. I love animals & birds. Every evening around dusk I go outside on the deck and watch the bunnies come out from under decks, the robins looking for worms, chipmunks nosing around, and the other birds flying in and out of their trees. It's a nice part of the day. And for some reason the animals and birds aren't afraid of me. I'll be thinking about sweet little Helen whenever I have an omelete!

Thanks for the info on the silicone rubber utensils. I had seen the hot pads made out of that and didn't care for them as they are too stiff, but I didn't know about the utensils. I don't spend much time shopping, so I am out of the loop on a lot of things, which for the most part, I don't really need. But these will be a big improvement over the old ones which eventually get melted a bit.

You're welcome, Mary! I think my sister got them at Bed Bath & Beyond, but I think I've also seen them at Walmart (for cheaper.) They really are handy.

Thanks for the info on where to get them. We always go to WM for extra sharp white cheddar which no one else in town carries and for my husband's favorite cereal, which is appreciably cheaper there. If the utensils are not there, I will just go to BB&B. Knitting blogs are great for keeping me up-to-date on a lot of things unrelated to knitting. Thanks again.

Omelets are one thing I have never cared for. Don't know why, but something about them just doesn't taste right to me. I love scrambled eggs though - my eggs do have to be completely done before I will eat them, so maybe the dislike of omelets has something to do with that. Don loves them though - so every so often, when we are off together, I will make him one.

Check Amazon.com for silicone spatulas. Free shipping for things over $25 at Amazon. They also have silicone coated wire whisks that I love. They don't scratch non stick pots. Oh, and silicone brushes for basting! Silicone ties for trussing chickens etc!

I don't like the silicone gloves (too cumbersome) or the pans. The pans don't work well and are floppy. You have to put them on a baking sheet to carry them to the oven.

Hi Donna! I just made some pendants and earrings which require more work (they're going to have dangly things on them and matching earrings.)So I'll put pics up whenever I finish them. I'll be working on them all weekend. The pieces are a little different than the other stuff I usually make!
